Chapter 1 Mix It Up Did you know that pizza is a mix of different foods? Let's make a pizza and see. We make pizza crust from dough. We use flour, water, salt, oil, and yeast to make dough. Yeast makes dough rise. When we make pizza dough, we mix solids and liquids. Flour, yeast, and salt, are solids. Water and oil are liquids.

Pizza has sauce. Pizza sauce is made of tomatoes, onion, and spices. We cook these together for a long time. Cooking changes the tomatoes and onion. They become soft.

Now we sprinkle on small pieces of cheese. Broccoli, spinach, and mushrooms taste good on pizza. We cut up these vegetables. Then we put them on top of our pizza. Why do we cut up the vegetables? A small piece of food cooks faster than a big piece of food. The heat can go through the small piece of food faster.

Chapter 2 Heat It Up Wait! We cannot eat the pizza yet. First, we have to cook it. Cooking changes many things on a pizza. Heat dries out food. When you heat pizza dough, the water goes away. The crust gets crunchy. We must not cook our pizza too long. Too much heat changes the pizza too much. The crust will turn black and hard. It will not taste good.
